How long will you be in town for? Personally I would skip Chubb and ride at Greensfelder Park (10 mins from Chubb) without much effort you can get a 12 mile loop at GF and the dirt is so fabulous.

Chubb has not been maintained and there are a lot of other users who now frequent the trail that take away from the experience...If you have a couple hours I would also suggest Lost Valley, If you have more time you can do a Bifecta or Trifecta which is a combination of Lost Valley-Matson Hill and Klondike Park, All these trails are connected by the Katy Trail ( reclaimed railbed) and its about 48 miles of riding.
